Cetara Armatore’s Colatura di Alici is a precious and delicious essence that comes from a tradition that has been handed down over time together with the techniques and secrets of the artisans.
The concept of the Riserva della Colatura di Alici edition draws inspiration from the faces of the fishermen who cross each wave with the same determination and make their long experience the real compass that guides them in the search for what will become “the Gold of Cetara”. The faces of the fishermen, furrowed by salt and shaped by the wind, create a dense weave and overwhelm us in their arduous wanderings made up of long silences and patient work.
The bottle is covered with this network of faces and the box is enriched with a cartouche that becomes the bearer of their story:
“Gentle or furious, the waves of the sea mark the life of fishermen. Wind and salt shape their faces. The sun accompanies their labors. The moon keeps their secrets.”
The Colatura Riserva is the result of the careful processing of anchovies fished strictly on the Amalfi Coast between March and April, processed a few hours after capture, gutted, placed in chestnut barrels with layers of sea salt and left to mature for 24/30 months.
Armatore continues his journey in excellence and in the dissemination of the gastronomic culture of the small seaside village.
